Yum! There are just Perfect for breakfast!

Ingredients
1 1/2 cups all-purpose flour
1/2 cup oatmeal
1/2 cup brown sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 egg
1/2 cup half and half
1/4 cup canola oil
1 peeled apple, chopped (I used a crispin)
1 small container of raisins

Start by mixing flour, oatmeal, brown sugar, baking power, cinnamon and salt.
Next combine egg, half and half and canola oil.  Friends make this much more fun!
Add wet ingredients to dry and
mix until just wet.. then walk away.. you can do it!
Then fold in apples and raisins.
Scoop into greased muffin tins
and bake at 350 degrees for 15 minutes.
Last pull them out of the oven
and drizzle them with powered sugar cinnamon syrup
(which is just a bit of powdered sugar and cinnamon dissolved in warm water)
And of course, share and enjoy!
p.s.  This DOES make a dozen muffins, however, 3 were snatched by my lovies as soon as they came out of the oven!
Love,
Pinkapotamus
